Summer is grilling season, right? (Well, sure … our friends in places like Southern California and the Florida Keys grill all year, but most of us can only dream of such smoky joy.)

And if summer is grilling season, we bet most people would agree that we can call winter “crock-pot season.” You know … warm, hearty, welcome-home-at-the-end-of-a-long-day soups and chilis and stews.
Healthy Slow Cooker Chicken Breast
Healthy Slow Cooker Chicken Breast Recipe is an easy and delicious dish to make but packed with such an amazing flavor. Staying incredibly moist and flavorful, these chicken breasts can be served as the main course, or shredded and used for another recipe.


  • 2 red onion-sliced
  • 2 bone-in skin on chicken breasts split in halves
  • 1 ½ teaspoons garlic powder
  • 2 teaspoons chilli powder
  • 2 teaspoons paprika
  • Salt and freshly ground black pepper-to taste

  1. Arrange sliced red onion in the single layer to cover the bottom of your slow cooker.
  2. In a small bowl stir together chilli, paprika, garlic powder, salt and pepper. Rub the chicken breasts generously and place on top of the onion.
  3. Cover and cook 3 ½ to 4 hours on high or until the chicken is tender and reach an internal temperature of 165°F.
  4. Drizzle with the liquid from the bottom of the slow cooker before serving.

Crockpot Chicken Mole (with rice pilaf)
Chicken Mole Ingredients:
  • 2.5-3 pounds boneless, skinless chicken breasts or thighs
  • coarse salt (to taste)
  • 1 can (28 oz.) whole tomatoes (I used chopped frozen ones from our garden)
  • 1 medium yellow onion, roughly chopped
  • 2 dried ancho chiles, stemmed and seeded*
  • 1 large chipotle chile in adobo sauce**
  • 1/2 c. sliced almonds, toasted
  • 1/2-3/4 c. raisins
  • 3 oz. bittersweet baking chocolate, finely chopped
  • 3 garlic cloves, peeled and minced
  • 3 tbps. extra-virgin olive oil
  • 1 tsp. ground cumin
  • 1/2 tsp. ground cinnamon
  • fresh cilantro leaves, for serving
Chicken Mole Ingredients:
    • 2 tbsp. butter
    • 1 shallot, minced (in a pinch, I've used a 1/4 of a yellow or white onion)
    • 1 c. brown rice
    • coarse salt and ground pepper (to taste)
    • 1 dried bay leaf
    • 2 c. hot water
    • 1 c. frozen peas
    • 3 tbsp. almonds, chopped or sliced

    Slow Cooker Korean Chicken

    • 1 lb boneless skinless chicken thighs, chopped
    • 1 lb boneless skinless chicken breast, chopped
    • 1/3 cup brown sugar (or Stevia, maple syrup, honey)
    • 1/3 cup low sodium soy sauce (GF if needed)
    • 10 cloves garlic, whole
    • 1/2 red onion, diced
    • jalapenos, diced (or Sriracha)
    • 1 tbsp. fresh ginger root, peeled and grated
    • 2 tbsp rice vinegar
    • 2 tbsp sesame seeds

    Crockpot Chicken & Potatoes




    • 1 pound baby Yukon gold potatoes — or baby red potatoes
    • 1 pound baby carrots
    • 1 ½ pounds boneless skinless chicken breasts — or boneless skinless thighs
    • 4 tablespoons unsalted butter
    • cloves garlic — minced, about 1 tablespoon
    • 2 ½ teaspoons Italian seasoning
    • ½ teaspoon kosher salt — plus additional as needed
    •  ¼ teaspoon black pepper — plus additional as needed
    • Zest and juice of 1 medium lemon
    • ¼ cup grated Parmesan cheese
    • Chopped fresh parsley — optional for serving
