Keto Berry Mug Cake

it is the berry season and time for another mug cake! if you have a hectic morning or craving something sweet, mug desserts are a fantastic manner to move. Even in case you don't have a microwave, you can double or triple the batch and make those inside the oven a night ahead. these are made with blended summer berries and is scrumptious when served with cream or coconut milk on top.







Ingredients 



  • 2 heaping tbsp almond flour (16 g/ 0.6 oz)

  • 1 heaping tbsp coconut flour (12 g/ 0.4 oz)

  • 1/8 tsp baking soda

  • 1 tbsp Erythritol or Swerve (10 g/ 0.4 oz)

  • 1 large egg, free-range or organic

  • 1/2 tsp sugar-free vanilla extract (you can make your own)

  • 1 tbsp extra virgin coconut oil or butter, melted

  • 3-5 drops liquid stevia (I used berry stevia drops from SweetLeaf)

  • a few berries - can be mixed, fresh or frozen (20 g/ 0.7 oz)

  • Optional: 2 tbsp whipped or pouring heavy cream, coconut milk or full-fat yogurt

  5. Microwave on high for 60-ninety seconds. Optionally, serve with cream or coconut milk.

  6. recommendations for cooking in the oven: in case you don't have a microwave, I advise you're making four-eight servings at once. Preheat the oven to 175 °C/ 350 °F and cook dinner for approximately 12-15 minutes or until cooked within the centre.
