Ham Cheese Cauliflower Fritters

  • 1 medium head cauliflower

  • 3 large eggs

  • 2 cups grated cheddar cheese

  • 1 1/4 cups finely diced ham

  • 3 tbsp coconut flour

  • 1 clove garlic, minced

  • 1 tsp mustard powder

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • Plenty of oil or butter for the pan


  1. Chop cauliflower into half of inch pieces and steam approximately 10 to 15 mins, till quite tender. Drain properly in a nice-mesh sieve. Mash up with a fork or potato masher, urgent to release as plenty liquid as possible. You don't need it perfectly easy, it must be a little chunky.

  2. switch cauliflower to a huge bowl and upload eggs, cheese, ham, coconut flour, garlic, mustard, salt and pepper. Stir nicely to combine.
