APPLE CARROT MUFFINS AKA SUNSHINE MUFFINS

these Apple Carrot muffins (also called Sunshine cakes) are full of carrots, apples, coconut, cinnamon & nutmeg. your house will smell first rate after baking a batch of them! those Carrot Apple muffins are the exceptional cakes to awaken to, therefore their nickname “Sunshine muffins”! They’re smooth and full of delicious flavor. They’re certainly one of my favourite muffin recipes. This recipe initially got here from my sister, Nicole, but I’ve been making it for my own family for years. It’s one of those recipes that everybody loves!


We undergo a variety of cereal at my residence. I strive to shop for the higher-for-you cereals but they emerge as sitting inside the cabinet, uneaten, for weeks. They’re excellent moist from the grated  carrots and apples and have a yummy, spicy taste from the nutmeg and cinnamon. It’s a sneaky (but fantastic) manner to get my youngsters to eat carrots and apples (without bribery) and hold them complete longer. Plus it allows hold my cereal shelf complete longer, too

Ingredients :
  • 2 cups flour
  • ¾ cup sugar
  • 2 tsp. baking soda
  • ½ tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 3 eggs
  • ½ cup vegetable oil
  • 2 tsp. vanilla
  • 2 cups grated carrots
  • 1 cup apple, peeled and grated
  • ½ cup chopped nuts, optional
  • ¼ cup coconut, optional
  • coarse sugar, for topping, optional


Instructions :
  1. Preheat oven to 350ºF.
  2. Combine the flour, sugar, baking soda, salt, cinnamon, nutmeg, eggs, oil and vanilla in a large mixing bowl. Mix well with wooden spoon.
  3. Fold in remaining ingredients: carrots, apple, nuts and coconut.
  4. Scoop into 12 regular-sized greased muffin tins and sprinkle a little coarse sugar on top of each muffin.
